power lunches

now that the sun is out a bit and my kids are both over two years old, i feel inspired by big salad lunches. for the first year of Little Miss M's life i lived off cheddar & avocado sandwiches plus carrot & cucumber sticks for lunch. it's what i fed the kids too. i do find if i eat a huge salad rather than sandwiches i have a lot more energy and creative zest for life and am not feeling desperate to go to sleep on the sofa all afternoon. The nice thing too is that you can eat mountains of it and it is still healthy! it doesn't take much forethought - i tend to grab every vegetable in the fridge and chop them all up. add some fruit and  seeds to spice things up. here are some ideas:

Salad 1:
grated carrot (lots!)
grated red cabbage
courgette
tomatoes
sunflower seeds
Salad 2:
spinach
cherry tomatoes
avocado
broccoli
cauliflower
cucumber
black olives
Salad 3:
lettuce
courgette
broccoli
cauliflower
spring onions
mange tout
celery
grated carrot
apple
Salad 4:
beetroot (cut in chunks)
courgette
cucumber
celery
cherry tomatoes
red pepper
rocket
mozzarella
left-over cooked bulgar
ready-to-eat puy lentils (yum!)
Salad 5:
grated carrot
grated beetroot
cabbage (roughly chopped)
tomatoes
rocket
celery
pine nuts
pumpkin seeds

Mr Z decided that he wanted to eat a whole beetroot to try to turn his wee red - one way to encourage vegetable eating!

  1. Oh, I could just gobble it all up! grrrumpf. Yum. The fish pie in your last post looks so good too. My two won't touch mashed potato sadly. Texture again?

    These are my favorite lunches too altho' I don't think I eat them as much as you do. Maybe the early spring this year will kick it in to gear, as well as your inspiring post.

    Oh and a small comment - have you been replying to anyone who writes on here? I always love it when bloggers do that. Look at orangette.blogspot.com for example. Just thinking down the road for gathering more followers.

  2. My usual salad is cannelini beans, tuna, red onion, capers, red pepper and dressing. Often followed by a Creme Egg...
